Little about me...

Just a little peek into my life...
 
I am married to an amazing man! He is loving and supportive, an awesome father, and works extremely hard so he can spoil us all. We have four amazing kids, two boys and 2 girls, ages 2, 4, 9, & 15. Our lives are crazy busy, but wouldn't change it for the world!
 
Food and cooking is something I have always enjoyed. It was something that I enjoyed doing with both my Granny & Grammy as a child. Those are some of my fondest memories... maybe that's why I enjoy it so much now. I love to take "oldies but goodies" and put a fresh spin on them or take leftovers from earlier in the week and make an unexpected meal out it... remember I have some of the harshest critics on the planet... KIDS!
 
Since my roots are in the south and along the east coast soul food and seafood are my loves... they make my heart smile. There is something about the smell of an amazing roast in the oven that makes me right at home, or apple sauce simmering on the stove that reminds me of my most favorite time of year... fall.
 
Until a couple of years ago, I was an anything goes chef... meaning the tastier the better... butter and salt were absolutely necessary in ev-er-y thing... I wasn't worried about any of the fat, calories, sodium, or processed CRAP that was being eaten. I know... I know...  Hey as long as it tasted good and the kiddos ate it mama was happy. I had been on a life long "diet" so depending on the week I may or may not have been "allowed" to eat what everyone was eating either. I am sure many of you can relate.
 
After my forth child my weight gain spiraled out of control... I actually GAINED 60 lbs in the eight months AFTER he was born. WHO DOES THAT?!?!?! Believe me... I was exercising, counting calories... blah blah blah.... after months of going to the doctor saying something has got to be going on, being told I was boarder line diabetic, and finally insisting on testing my hormone levels, I was diagnosed with Poly cystic ovary syndrome (PCOS). The diagnoses was devastating, but a relief at the same time. I now knew what was going on inside my body and started educating myself about how to gain control of my body again. Most of my symptoms had been masked/controlled by birth control, and lack of knowledge about the disease and symptoms. Diet & nutrition is imperative for all of us, but especially for those of us who have insulin resistant health conditions.

Not only did I lose 42lbs in my first 90 days... my blood sugar levels were normal after the first week, hormone levels were normal when I went back for testing in 6 months, acne cleared up, migraines stopped, depression gone, energy through the roof... and have lose lost a TOTAL of 80+ pounds and STILL losing weight and getting HEALTHY & FIT!!! Even with all of these fantastic things going on in my life, I was hit with another hurdle... cervical cancer. Talk about scared.... just the word CANCER is terrifying!!! With some amazing doctors and some very good... and bad days I am now cancer free! Thank you Jehovah!!! During this process I have learned what to eat and what to stay away from... all while on a budget and appeasing the little Indians when it came filling there little bellies. There were some great successes and times that my youngest pushed the late away and said "nas-ney" as he turned his head... I guess you can't win them all hahaha. I had a blast learning something new each and every week. Now I want to share with the rest of you what I have learned through trial and error, and hopefully learn a few things from you guys.
